delicious versatile crepes recipe

Crepes are versatile, thin pancakes that can be enjoyed sweet or savory. They’re simple to make and perfect for breakfast, brunch, or dessert. This recipe yields tender, delicate crepes that can be customized with various fillings.

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter (plus extra for cooking)
  • 1 tablespoon sugar (optional, for sweet crepes)

Instructions:

  1. Prepare the batter: In a mixing bowl, whisk together flour and salt. In a separate bowl, beat the eggs, then add milk and melted butter. Gradually pour the wet ingredients into the flour mixture, whisking until smooth. Let the batter rest for 10-15 minutes.
  2. Cook the crepes: Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the skillet, tilting to spread it thinly. Cook for 1-2 minutes until the edges lift and the bottom is golden. Flip and cook the other side for 30 seconds. Repeat with the remaining batter.
  3. Serve: Stack the crepes on a plate and fill with your choice of sweet or savory ingredients, such as Nutella, fresh fruit, cheese, or ham.

Notes:

  • For savory crepes, omit the sugar.
  • Adjust the milk to achieve the desired batter consistency.
  • Store leftover crepes in an airtight container for up to 2 days.

Prep time: 10 minutes

What To Serve With It

When I’m making crepes, I love thinking about all the delicious pairings that can turn a simple dish into a full meal or a sweet treat.

For savory options, I’ll fill them with ham, cheese, spinach, or mushrooms, topping them with a creamy sauce for extra flavor.

Sweet crepes are my favorite—I’ll spread Nutella, add fresh berries, or drizzle honey and sprinkle powdered sugar. A dollop of whipped cream or a scoop of ice cream takes them to the next level.

Sometimes, I’ll serve them with a side of bacon or fruit salad for balance. The possibilities are endless!
